Découper le poulet en morceaux et les faire revenir dans un faitout avec un peu d'huile. Quand les morceaux sont dorés, ajouter les oignons émincés. Bien mélanger et laisser rissoler quelques minutes à feu doux. Ajouter deux verres d'eau. Saler, poivrer, saupoudrer de safran et laisser cuire à petits bouillon pendant 1 heure. Un quart d'heure avant la fin de la cuisson, ajouter le citron confit entier. Mixer les tomates une fois réhydratées, ajoutez y du basilic, de l'ail, de l'huile d'olives.&lt;br /&gt;Vous pouvez également y ajouter des olives émincées ou mixées, de l'origan, excellent pour mettre en sauce avec les pâtes...
